Place the
snail-shaped cold smoke generator in the smoker, previously filled with moistened smoking powder. Allow to smoulder over a small flame such as a tea light.
Cold smoking brings a delicious smoky flavor to your food without cooking it. Cold smoking takes place at a temperature of between 0 and 25°. It brings surprising smoky, ashy flavors to hard cheeses, but also to other varieties such as goat's and sheep's cheeses.
Hot smoking takes place at a temperature of between 70 and 120°. It is used to slow-cook fine cuts of meat to make them juicy and flavorful, with a pleasant smoky taste. To carry out hot smoking, you'll need wood shavings, wood or charcoal, matches or a gas lighter. You'll also need a liquid such as water, broth or alcohol. Start by removing the top of your
smoker and light the wood or charcoal in the charcoal bowl at the bottom of the smoker. Sprinkle water-soaked smoking shavings or pieces of wood over your coals when the charcoal or wood is covered with a fine gray layer. All that's left to do is replace the grill, barbecue top and lid, and you're ready to smoke!
